Continuing the “Leuty’s facts about fruit & vegetables” posts. The book I’m reading now has a main symbol through it, being the beet. It opens with saying “the beet is the most intense of vegetables”

It has a continuous symbol of the beet. I may have already mentioned this book, its called “Jitterbug Perfume”.

The book says, “You can’t squeeze blood out a turnip”

I have to say I wasn’t so passionate about beets before I read this.

The beet, it’s self, has plenty of vitamins. Such as they are a great source of fiber, folate(vitamin B9), manganese, potassium, iron, and vitamin C.

One of the things I really like now is a beetroot & pineapple salad. It’s truly delicious. It has that mixture of sweet & savoury which is very popular right now, growing in popularity with salted caramel.
