Maybe I should do a blog post titled “Leuty’s facts about fruit & vegetables” because I did one quite recently about the pineapple & now I’m about to do 1 about artichokes. It is related to the sunflower & is the only vulnerable to be entirely native to North America.

The Jerusalem artichokes are sometimes called the “sunroot”. Jerusalem artichokes have edible leaves & tubers. The Jerusalem artichoke derived from the Italian word for “sunflower”. Jerusalem artichokes are part of the daisy family. & they’re rich in iron, providing energy.

They also have lots of potassium & vitamin B1.

They are quite sweet, but their fibre stops any spikes in blood sugar levels (good for diabetics)

They have quite a low glycemic index (GI) score than potatoes.
